This service is quite traditional and often customized on the basis of nature of the foods. 0:49 FEATURES OF CHINESE FOOD & BEVERAGE SERVICE STYLE = Chinese service includes certain unique characteristics which make it traditional and sophisticated service which you find in the next slide: 1- Chopsticks are served with all foods, except soup and dessert spoons. 2- Foods are presented and served attractively into dishes and brought to the table so that guests can choose food according to their taste. 3-Chinese service is less labor intensive but the amount of serviceware is quite extensive since foods are served in individual dishes. 1:32 = CHINESE TABLE SETTING PROCEDURE = In Chinese service, tables setting procedure is different from others service in the following way: 1. In most cases, a circular wheel is placed in the table center so guests can rotate it and share food. Otherwise, for large groups a small plate (about six inches wide) is placed in the center cover. 2. A rice bowl along with a cup of rice is placed to the right side and a small cup of tea is set slightly on top of the rice bowl or slightly to the left above the center plate. 3. Chopsticks are placed on the right side of the guest keeping on a small stand. Sometimes a long handled, round spoon and bowl may be served to the left of the chopsticks. 4. Spoon and forks are also served for those guests who find it difficult to eat with chopsticks. 3:05 CHINESE FOOD & BEVERAGE SERVING PROCEDURE = 1. Foods are elaborately dished on platters and served in the center of the table and then Guests help themselves to select their own food. 2. Good food and smooth service combine to relax and create a feeling of well being. All the service contacts--from reservation through to paying the check and getting the taxi--combine with food to make a special experience. Wang Ping pushes to capitalize on this. They invest in customer service that has become part of their culture. There are successful and this had brought national awards from groups including, Accenture. They have expanded into China and continue to consider other markets. In total they have nine brands to serve these markets. Our next set of shows focuses on Wang Ping and three of these brands: Wang Ping Steak, Tasty and Tao Ban Wu. Steve Day, chairman of Wang Ping started his entrepreneurial career with a theme park. It's collapse had a silver lining: he could find a niche that matched business with his passion for elegance and harmony. Dining out with two classmates they were all commented on how good the steak was. Steve returned a few days later to try and tempt the chef to join a business that was still very much in the planning stage. The chef refused and Steve with his classmates set about replicating the taste of the steak and turning it into a restaurant. They quickly invested in development of seven locations in Taipei and Taichung. "It just didn't have the feeling of the service I wanted," Steve commented later. Recruiting a human resource specialist changed this and began their transformation to a restaurant chain that is as much about the service as it is about the food. When we meet Mr. Day he had just returned from a hiking trip in the inner mountains. Despite a supposed vacation he opened his backpack and pulled out customer satisfaction, complaints and profits reports for all restaurants. It is this kind of fanatical focus on customers, service and performance that drives the group forward. Their approach is fairly structured. Service is well scripted so staff are clear about what they should do and in what order. However it retains the passion needed for distinctive service. If a customer looks unhappy a team supervisor, or just as likely, the manager will appear and solve the problem. Their listening to customers extends out of the door too. If a customer leaves a negative comment on the feedback card they can expect follow up. One customer on the island of Penghu found the manager of the Taipei restaurant on his door step to apologize for the cold soup. They successfully serves a high end niche of either business or individual customers. For the Western mind the approach can seem a little structured. However, this is a company that cleverly pushes just ahead of the customer expectation curve. The menu has expanded over time. The service is consistent, friendly and helpful and comfortably beats the competition. It fits and thrives on its local setting.

fine dining Chinese restaurant at Taj Chandigarh has undergone a stylish renovation. The entire concept flows into a visual and culinary narrative picking up from the central theme of the space, as well as from the iconic scripture of the Ming Era, titled, Golden Lotus. The newly refurbished space includes a contemporary and comfortable bar area along with an effervescent alfresco, thematic interiors and an all new menu. One of the first fine dining Chinese restaurants to have opened up in City Beautiful, Black Lotus already enjoyed a prestigious status. Known to serve specialties like crispy corn kernels, Peking duck, chicken chilli mountain and tiger prawn sesame chilli sauce, this was a place that saw its fair share of diners for both lunch and dinner. As the space undergoes a transformation, it brings in a strong thematic tie-in with the cuisine service style and de décor, to create a unique experience. Accents from innovated textures from the lifestyle during this era have been used. The pairing of three dimensional fabrics woven specially for the occasion seek inspiration in the architecture of the location. The cuisine story is of contemporary Chinese with a focus on modern flavors and plating. It also reflects the traditional cultural motifs, from China, albeit, given a modern and contemporary appeal. The central theme, takes its name from the restaurant, thus picking up the motif of the Lotus. The key elements from a design stand point will be the three dimensional artworks created in metal, which talk about the growth of a lotus and how it slowly takes over the pond. The strategic use of privacy screens complements the space while making the overall ambience more intimate but yet open. The color scheme in the tones of grey accentuated with rose gold and claret add intrigue while bringing a sophisticated and muted touch to the entire space. Having served for almost a dozen years, the restaurant welcomed the comprehensive renovation that it has received with a freshness of the menu. Black Lotus, in its new avatar brings to the table some very authentic dishes from the Schezwan belt of China. Expat Chef Wang, joins hands with Chef Gaurav to come up with a menu that flaunts some very unique additions. Grills featuring almost all kinds of meats and sea food bring in an all new perspective when it comes to Chinese dining. Presented on a hot plate, these dishes focus on retaining the flavor of the meats, with minimalistic use of sauces. Another interesting section that has been added to the menu is clay pots. Here the food has been cooked in UN-glazed pots and is served in a mix of rice/noodles and the made to tailor sauces, of the guest’s choice. Other sections that are wining flavor with the diners are wontons and baozi. Dishes like stir fried lobster garlic pepper; Haricot beans with dry chilli in black bean sauce and steamed tofu on a bed of bok choy are definitely set to wow the guests. The desserts, usually a neglected section in Chinese menus, have been given a lot of attention and some unique sweets like lemon grass crème brule or clove triangle pineapple with chilli and coconut milk, can be tried here. Old time favorites have been retained and given their place of honor in the new menu, which works wonderfully for Black Lotus patrons. The service style of the restaurant has brought in some very interesting themes from China and adapted these to cater to the guests here. Right from the Ni Hao greeting to the elaborate jasmine tea serving style, all of it is in keeping with the oriental aura. The wet towel, welcome drink and palate cleansingsorbet combine to add to the dining experience in the restaurant. Sumit Sharma, the restaurant manager has managed the art of service with perfection, by paying attention to detail and maintaining the Taj luxury benchmarks. With a private dining room, split level seating, casual lounge area and an alfresco, Black Lotus now offers a seating capacity of 80 people. Be it a choice from formal to casual dining, a sophisticated serving module or an elaborate and authentic menu, Black Lotus offers it all. Open from 1 pm to midnight, seven days a week, it is clear that the restaurant is all set to change the course of Chinese fine dining in Chandigarh.

Growing up, Terry’s mother was always cooking, and he would help her with food preparation in the kitchen. During his National Service, Terry was assigned to serve as a chef. In an environment centred around food, Terry naturally gravitated towards cooking as a career, without even consciously doing so. After graduating from culinary school in 2007, Terry began his career in Japanese, French and buffet concept restaurants.
