Hey everyone! This is my first ever "what I eat in a day" video, and I decided to make it because I really enjoy watching other YouTubers' what I eat videos. I hope you enjoy! I know my video-making skills could use some improvement, so slowly but surely I'll improve.
Here's what I ate today:
Breakfast: "Overnight" oats made quickly with quick oats, water, a splash of black cherry juice, cinnamon, and fresh berries. I just allowed this to sit for a bit until I was hungry. It doesn't have to be refrigerated overnight!
Lunch: Mashed potatoes:
I took 2 Yukon gold potatoes and boiled them until they were soft when I poked with a fork, about 30 mins. Then I smashed 'em up and added a bunch of nooch, some Pizza & Pasta Magic seasoning (basically an Italian blend), a bit of hot sauce, garlic, and turmeric. I sliced a tomato on the side and added some shredded iceberg for crunch. So good!
Dinner: Tortilla-ish Veggie Soup
I started by putting about a cup or so of water in my pan and adding about a half cup of rinsed quinoa, half cup of brown rice, and a box of veggie broth. To that I added a rinsed and drained can each of black beans and cannelini beans, a can of drained corn, drained green beans, 1 can of diced tomatoes with juice, a chopped yellow onion, and a little bit of dry oregano and turmeric. Later I added about 1/4 of a packet of Lawry's Burrito seasoning for a Mexican feel. I served it up with some fat free corn tostada shells and some jalapenos. It was awesome!
